Group Meals at Telluride Restaurants 

A group meal at one of Telluride's fine restaurants is a great way to wind down a day of hiking and discussion. We have worked with Telluride's restaurateurs over the years to offer our participants great deals. Please contact TSRC Director, Nana Naisbitt by email or by phone at 970-708-0004 for more information or to make a reservation. TSRC collects payment from each guest, unless the organizer wishes to use corporate or other support to cover the costs. 

Meal prices are tax exempt and include tip on the food. Drinks are not included and are billed individually with tip added. 

Cosmopolitan Restaurant

Located next to the gondola station, Cosmo is famous for their delectible cuisine, fine martinis, and superb wine selection. Chef Chad Scothorn meticulously tends to every detail of the restaurant. TSRC meals are held in their private cellar that can accommodate up to 32 people. Please see the sample menu below. Price $50 per person for the fixed price meal; tip is included; tax-exempt; drinks paid individually.

1st Course, choose one

  • Mixed Organic Greens: buttermilk bleu cheese, blackberries, toasted almonds, & red wine vinagrette
  • Caesar Salad: Avocado, chopped egg, & Parmesan

2nd Course, choose one

  • Grilled Pesto Marinated Chicken Breast, served with prosciutto-porcini risotto & green beans
  • Hickory House-Smoked "Kurobuta" Pork Short Ribs, served with swiss chard-goat cheese risotto, tomato & basil
  • Grilled Beef Hanger Steak, served with creme fraiche potatoes, green beans and maitre'd butter

3rd Course, choose one

  • Warm Blueberry Pie, served with almond-marscapone ice cream, almond cookie & blueberry sauce
  • Vanilla Bean Creme Brulee, traditionally prepared with fresh fruit
  • Triple Chocolate Mousse Cake, served with raspberry sauce, whipped cream & chocolate garnish

The New Sheridan Chop House

After an extensive renovation, The New Sheridan Chop House's lavish dining room pays homage to Telluride's mining era. As it rightly should: The combination restaurant, hotel, saloon has been in business since 1892. TSRC guests are accommodated in the private "American Room," which hold up to about 35 people. The food is outstanding and the service both professional and friendly. Price $55 per person for the fixed price meal; tip is included; tax-exempt; drinks paid individually.

  • Mixed Artisan Lettuces, Point Reyes Blue Cheese, Bosc Pears, Walnuts, Red Wine Vinagrette
  • Sweet Corn Soup

2nd Course, choose one

  • Rocky Mountain Trout, Pistachio Crust, Haricot Vert, Cauliflower Mousseline, Lemon and Caper Brown Butter
  • Prime Coulotte Sirloin, 10oz, Grass-Fed "Painted Hills Farms," Whipped Idaho Potatoes, Grilled Asparagus, Bordelaise Sauce
  • Shitake Boursin Ravioli, Mozzarella Tomato, Pine Nuts, Pesto Cream Sauce, Aged Balsamic

3rd Course, choose one

  • Lemon Tart, Blood Orange Coulis & Mint Chiffonage
  • Vanilla Bean Creme Brulee, Mixed Berries

Rustico Ristorante

Rustico is a long-time Telluride favorite. Housed in a beautiful stone building on Main Street, Rustico serves up the best Italian fare in Telluride. They have lots of room and an exceptional wine list. Also the only wood-fired oven in town. Their lovely private rooms holds up to 50 people. Price $50 per person for the fixed price meal; tip is included; tax-exempt; drinks paid individually.

1st Course, choose one

  • Insalata Cesare-Romaine Lettuce with homemade Caesar dressing, shaved parmigiano cheese and fresh focaccia croutons
  • Minestrone-Homemade vegetable soup
  • Insalata Verde-freshly sliced thin green cabbage, wild and select mushrooms and pine nuts with Mediterranean dressing
  • Insalata Rustico-Mixed field greens, roasted bell peppers, goat cheese and black olives tossed in a light citrus vinagrette

2nd Course, choose one

  • Vitello ai funghi di bosco-Thinly-sliced veal sauteed with wild and selected mushrooms finished with Vernaccia di San Gimignano white wine
  • Salsiccia con Polenta-Grilled in house sausage served with polenta, roasted red bell peppers, zucchini, and onions peperonata
  • Ravioli del Giorno-In house ravioli of the day with pink sauce
  • Rigatoni Estate- Tube pasta with mushrooms, zucchini, fresh-chopped tomatoes, spinach, white wine, garlic, fresh ricotta and extra virgin olive oil
  • Scaloppini di Pollo al limone-Free range chicken breast sauteed in a lemon and capers sauce
  • Salmone alla Checca-Fresh Atlantic salmon with fresh chopped tomato, basil, and extra virgin olive oil

Dessert, choose one

  • Tiramisu-Traditional Italian ladyfinger biscuits dipped in espresso layered with marscapone cheese and chocolate
  • Spuma di Cioccolato-Homemade delicate dark chocolate mousse
